Wilson embarked on his journey in the world of craft beer by starting out as a home brewer. He is of the belief that the best way to understand a particular style of beer is to brew it yourself. Since obtaining his certification as a BJCP (Beer Judge Certification Program) judge in June 2017, he has traveled around APAC for judging beer competitions, both for home brewing and commercial brewing.

Aside from judging beer, Wilson is one of the co-founders of Beer Geeks Generation, a group of three BCJP judges who aim to promote craft beer appreciation and knowledge of beer styles in Hong Kong. Recently, he and some fellow beer enthusiasts founded Hidden Gem Beer brand, which focuses on producing high-quality beers with styles that may not be well-known in the market. Their first beer, a barrel-aged smoked porter, is scheduled to be released at the end of 2023.

Wilson has also previously served as an instructor of beer appreciation workshops, a BJCP tasting exam proctor, and editor of the beer column for Malt & Spirits Magazine. In addition to his passion for beer, Wilson is also an avid wine lover and holds a WSET level 3 certificate as well as Certified Wine Specialist. He was also a member of the Executive Committee of The Society of Wine Educators Hong Kong Chapter.
